Mangalore Coconut Chicken


Ingredients:
1.   8 Medium Size pieces of Chicken
2.  1 cup Finely chopped Onions
3.  3 tsp of coconut Milk Powder ( substitute with ½ Can coconut Milk)
4.  2 tsp of Dry Coconut
5.  2 Tsp Cumin Seeds ( Jeera)
6.  1 Tbs Finely chopped Chilles
7.  1 Tbs Tamerind Paste
8.  ½ Cup Garlic
9.  ½ Inch Ginger Finely Chopped
10.2 Tsp Whole Garam Masala ( Cinnamon, Cardomom, Cloves, Fenugreek Seeds, Dried Chilles)
11. 1 Tsp Turmeric
12.1 tbs Oil
13.Salt to Taste
14.Coriender to Garnish

Instructions:
·         Grind together all the ingredients except half the onions and fenugreek seed powder to a fine paste.
·         Heat the clarified butter (ghee) / butter / oil in a heavy bottomed pan till hot. Add the fenugreek seed powder and the remaining chopped onions. Fry till the onions are light brown in color. Add the ground paste and saute on medium level for about 3 minute(s) or till it is aromatic.
·         Add the chicken pieces and salt to taste. Add water according to the consistency desired and bring to a boil. Cover and cook on low level for about 25 minutes or till the chicken is fully cooked.
·         Garnish with finely chopped fresh coriander leaves.


Serve with Idly, aapam or Dosai
