Orange Chia Seed Cake




INGREDIENTS 
·        3 large eggs
·        3/4 cup (160g) caster sugar
·        1 1/3 cup (160g) all-purpose flour
·        1/2 teaspoon baking powder
·        1/2 Cup Vegetable Oil
·        1/2 Cup Chia Seeds
·        2 large orange (juice + zest)
INSTRUCTIONS
1.      Preheat the oven to 350°F (180°C) and grease a 10 x 4.5-inch (25×10 cm) loaf tin.
2.     In a large bowl, beat the eggs, Oil, Orange Juice and sugar until pale and fluffy.
3.     Sift in the flour with the baking powder, stirring well.
4.     Juice and zest the fresh orange and incorporate.
5.     Pour the batter into the loaf tin and bake for 30 minutes or Until Fork comes out clean.
6.     Allow the cake to cool completely before serving.
Glaze
  1. Stir in a tsp of Zest, 2 tbs of Orange Juice and Powdered sugar
