Pav Bhaji for the busy Weeknight


Ingredients
1.   Vegetable Oil – 1 Tbs
2.  Butter or substitute to fry the pav/bread
3.  Garlic - Tsp
4.  Onion – 1cup finely chopped
5.  Tomatoes – 1 Cup finely chopped or Crushed tomatoes
6.  2 Medium sized potatoes
7.  Carrots – Chopped 1 cup
8.  Peas – 1 cup
9.  Cauliflower – 1 cup
10.      French Beans – 1 cup
11. Tip: Use potatoes, V8 Juice, and 3 cup Frozen mixed vegetable to make life easie
12.      Pav Bhaji Masala – 2 tbs
13.      Salt – To taste
14.      Lemon – Cut in 8 pieces for serving
15.      Cilantro – To serve
16.      Raw onions – finely chopped to serve

Procedure:
·        Pressure cooks all the vegetables (potatoes, Carrots, Broccoli, Peas, Beans) in the pressure cooker until 3 vissils. Remove and Mash all the vegetables
·        Heat the oil in a wok over medium heat. Saute garlic and green chile for 30 seconds, then stir in onions. Cook until onions are brown.
·        Add mashed vegetable and stir.
·        Add tomatoes, add water cook until pasty.
·        Add salt to taste, ½ Tsp Turmeric, ½ Tsp Coriander.
·        Season with 3 Tbs pav bhaji masala. Cover, and cook for 5-10 minutes, stirring occasionally until desired consistency is achieved.
·        Toast the dinner rolls, and spread lightly with butter. Serve garnished with chopped onion, cilantro and lemon.
·        Enjoy!
Once you get it right, you will never go to any indian joint for Pav Bhaji.

With all these veggies in the meal, it definitely qualified “HEALTHY”.
