Some Background:
Being and Indian, that too a south india, it is so hard for
me to find some american recipies that can be healthy,easy to cook and at the
same time, please my taste buds.
This is a mixed version of our rasam. However I am pretty
sure, after you have tried it, You will just fall in love with it, Like I did.
Ingredients:
1.
1Chicken Breasts ( Skinless,
Boneless and Finely chopped)
2. Half
Large Onion ( 2 small onions from the desi store)
3. 1Tomatoes
( Finely chopped)
4. Corn
( one Can, or one Bowl frozen)
5. Cilantro
( Dhaniya)
6. Celery
(2 cups chopped)
7. Chicken
Broth ( 2 Cans) [ one neat trick, to add water and add chicken bullion cubes]
8. Chili
powder ( 2 tsp)
9. Turmeric
(1 tsp)
10.Salt (3 tsp)
11. One
Tbs Olive oil
12.Tortilla chips
to Serve
Directions:

In a large pot, add one tbs olive
oil, add onions. After onions have cooked, add chicken, tomatoes, corn, celery,
and chicken broth. Let it cook till chicken is cooked approx 20 minutes.

Now add salt, chili powder,
turmeric. Let it cook another five-seven minutes.

Garnish with Cilantro
To Serve:
In
a large bown add tortilla chips and pour in the soup. Serve hot.
Tip: Freeze it after it cools down to save for after few days.
Tip:
Replace chicken with Mushrooms, or potatoes to make it vegetarian tortilla soup
