Rice Cooker Shrimp Pulav

My mantra “Work Smarter not Harder”.  With a little effort you can achieve a crowd pleasing Shrimp Pulao.

Here is the List of Ingredients:

  1. 3 Cups of Shrimp
  2. 1 and half Cups of Rice (Aged Basmati or Sona Masori)
  3. ½ Cup Oil
  4. Remember this Mantra: Little less than 1/4 amount of Rice should be the quantity of Oil. Shrimp should approximately be double the amount of Rice.
  5. 4. 1 tsp whole Elaichi
  6. 1 tsp Laung
  7. 2 Bay leaves
  8. 3 Whole Red Chillies
  9. 1 tsp Whole Black Pepper
  10. If you are using the Indian store Biryani Masala pack, then Skip Ingredients 5 to 9.  Use the Rice Preparation Packet that comes with this.
  11. 4 Green Chilies slit long – Or to Taste
  12. Whole Garlic – 7-8 Cloves
  13. 2 Tbs Ginger Garlic Paste
  14. 1 Cup 1 inch cut onions
  15. 1 Cup 1 Inch Cut Tomatoes
  16. 4 Tbs Yoghurt
  17. ½ Packet (Shan or Banne Nawab Mutton Biryani Masala) or any other garam masala of your choice
  18. Salt to Taste
  19. Red Chili Powder 1 tsp
  20. Coriander Powder
  21. 1 Cup Coriander leaves
  22. 7-8 Curry leaves
  23. ½ cup cashew nuts
  24. Mint is optional as some people do not like the taste...I definitely do

Instructions:

  1. Soak the rice first and foremost
  2. Marinate the Shrimp with red chili powder, yogurt, ginger garlic paste, salt, ½ of Biryani Masala, Coriander Powder, Mint Leaves
  3. In a pressure cooker add oil, whole Garam Masala (Empty the pre-packed Rice Packet), cashews, Bay Leaves, Red Chilies’. Let them fry for a minute until you can smell the aroma of fresh spices.
  4. Add Green Chilies, Garlic, Curry Leaves, Mint Leaves
  5. Now Add onions and let them Brown. Add salt after the onions have caramelized.
  6. Add Shrimp and let cook for 3 minutes on high and 5 minutes on medium.
  7. Add Tomatoes
  8. Pressure cook for 2 Whistles
  9. Check the salt (Should be a little salty)
  10. Add a 1 cup of water to Rice Cooker ( Ratio: One cup of water for every 1 and Half Cup of Rice). This may seem like insufficient water to cook. Note that the rice is soaked and all the liquid from pressure cooking the shrimp and tomatoes, will be enough for the rice to cook.
  11. Add the cooked shrimp gravy to the Water in the rice cooker
  12. Turn on the Rice Cooker
  13. Turn Off the Rice Cooker and Wait 10 minutes before serving, else rice will break.
  14. Add fresh Coriander leaves when you serve.
Serve Hot with Raita. (Traditionally Andhra Raita has Thin sliced Onion, a Tsp of Jeera and Yoghurt)
